Refreshment--Isthmus style

What tastes delicious and refreshing when it is 90 degrees plus?  Fresh coconut milk!  This past weekend I was in the isthmus of Tehuantepec for a few days at a pastors' meeting.  Even though we were in the mountains, it was HOT!  Add to that the fact that we were in a tiny church with few windows, little ventilation and a metal roof...well, you get the idea.  It was kind of like being slow baked in an oven.

While we were inside at the meeting one of the men from Lachivisa shimmied up a palm tree and cut down a bunch of coconuts. 

He put the coconuts in a wheelbarrow and brought them to the church along with his machete.  When it was time for a break in the meetings, we lined up outside and were handed a straw.  Then one by one, he hacked off the top of each coconut, put the tip of his machete into the top and...we had fresh coconut milk.

This treat, along with 30 minutes of being able to wade barefoot in the local river, and we were ready to begin again.

You are going to find life in Chicago sooooo boring when you move back! :-) After that experience - and I'm sure that it wasn't your first coconut - can you tell me approximately how much coconut milk is in a typical coconut? I always imagine about a 1/4 cup, but that wouldn't be enough to be refreshing, so help me out here. Thanks!

Judi- It depends on the size of the coconut and how fresh it is. But I would estimate at least a cup and a half in each coconut. Coconuts in supermarkets in the Chicago area are not very fresh and have little if any milk in them.
